03History
Jerry Thomas's 1876 edition carries the fizz: the sour's carbonated sibling, built to drink fast — 'a long drink but a quick one', the books said. New Orleans took it further, adding egg white, cream and orange flower water until it became the Ramos.
The difference between a Fizz and a Collins is technique: the fizz is shaken, then topped.
